For the butter

  • 5 pz pears
  • 150 gr dark chocolate
  • 2 spoons vanilla extract
  • 120 gr unsalted butter
  • 120 gr brown sugar
  • 4 eggs
  • 100 gr chopped almonds
  • 1/2 teaspoon baking powder
  • 1 spoon cacao poudre

For the chocolate cream

  • 100 gr dark chocolate
  • 60 ml heavy milk

For the syrup

  • 1 l water
  • 120 gr granulated sugar
  • 1/2 lemon juice
  • 2-3 cinnamon stick

  • Pealing the pears, leaving the steams on. Next, put them in a bowl of water. Put the rest of ingredients for the syrup.
  • Slowly bring to the boil, swilling to dissolve the sugar. Simmer the syrup for 5 minutes, allowing the flavours to develop.
  • Add the pears for about 5-7 minutes. Until the pears are tender, but still firm.
  • Preheat the oven to 180°C (350°F.) Melt chocolate and vanilla in a bain marie. Mix well butter and sugar and then add eggs. Add melted chocolate and mix again. Add some chopped almond. Add then flour and cacao poudre.
  • Pour the cake batter into the baking pan and place pears on top of the cake batter.
  • Bake for about 45 minutes or until the toothpick inserted in the center of the cake comes out reasonably clean and the cake bounces when touched. Set aside for about 10 minutes to cool a little.
  • Melt the chocolate with hot heavy cream on a sauce pan. Stir well to mix in.
  • Pour the chocolate cream on the top of the cake.
  • It will make this tasty Chocolate Pear Cake look really pretty!
